The Last-Minute Recipe Trio to Perfect Your Friendsgiving

Finally, we are approaching the most wonderful time of the year. After everything we’ve endured in 2020, getting the chance to spend quality time with friends, family, and loved ones sound like an absolute dream. Figuring out what to bring to your Friendsgiving can be a difficult task, but don’t worry, sis—we’ve got you covered. Whether you’re a master chef or a microwaveable meal pro, these delicious recipes will be the easiest side dishes to whip up for your Friendsgiving. 

Stuffing

Ingredients: 

  • 1 package of cornbread mix 

  • Preferred stalks of celery 

  • 1 onion

  • 1 loaf of white bread 

  • 1 container of chicken broth 

  • Stick of butter 

  • Sage 

  • 2 eggs 

  • Salt and pepper 

Directions: 

  1. Make the cornbread as stated on the back of the box. Once cooked, let it sit and cool. 

  2. Saute the onions and celery in butter. Include your desired amount of onions and celery, as there is no exact measurement. 

  3. Get a bowl. Pour in the chicken broth, add the stick of butter and the beaten eggs. 

  4. Take the white bread and soak 4-5 pieces at a time in the chicken broth mixture. Slowly add in the cornbread and more pieces of bread. If it becomes too dry to be able to mix the bread into the mixture, add a little bit of water. 

  5. Mix the cornbread and bread in the bowl. Using your hands is easiest so use gloves if necessary. Once both breads are completely mixed, add in your celery and onions then add 3-4 tablespoons of sage and ½ teaspoon each of salt and pepper. Make sure to mix well.

  6. Put into the oven at 350 degrees for 45 minutes. It could take up an hour and a half to completely cook through; you just want the stuffing to be browned on top. 

  7. Take out of the oven, let it cool for around 5-10 minutes, and enjoy! 

Mashed Potatoes 

Ingredients:

  • 4-6 potatoes

  • Milk 

  • 1 stick of butter 

  • Salt and pepper to taste 

  • Optional: garlic and sour cream 

Directions: 

  1. Peel the potatoes. The amount of potatoes you should peel depends on the number of guests you will have. 

  2. Dice the potatoes into small pieces with a knife. 

  3. Fill a pot with water then add in the diced potatoes 

  4. Bring water and potatoes to a boil, reduce to a simmer. 

  5. Boil the potatoes for about 20 minutes until you can poke them with a fork and they are soft.

  6. Drain the water out of the pot and add a stick of butter to your potatoes. 

  7. Blend with a hand mixer or potato masher.

  8. Slowly add milk to the potatoes; you won’t need more than ½ a cup.

  9. Add salt and pepper to taste.

  10. Optional: add in garlic powder or a dollop of sour cream. 

  11. Serve and enjoy!

Cheesy Potatoes 

Ingredients: 

  • Bag of partially thawed shredded hash browns 

  • 8 oz of sour cream 

  • 1 can of cream of chicken 

  • 8 oz of shredded cheddar cheese 

  • Potato chips 

  • 1 stick of butter 

Directions: 

  1. Preheat the oven to 350 degrees.

  2. Combine in a bowl the bag of hash browns, sour cream, cream of chicken soup, cheese, and melted butter and mix well.

  3. Pour into an ungreased baking dish.

  4. Top with crushed up lays potato chips. 

  5. Bake for 45-50 minutes and enjoy!
